We brought in lots of colorful vegetables into the schools this January. Our taste tests featured Rainbow Potato Salad with purple and yellow fingerling potatoes from Lakeview Hill Farm. It was the first time many kids had tried purple potatoes as well as trying a vinegar based one! Getting creative with new recipes helps kids get excited.

We also continued our Snap-Ed Nutrition Lessons this month focusing on learning about making fruits and vegetables take up half our plates at meal times. Our healthy snack was veggie roll ups. We used large tortillas, refried beans, peppers, cucumbers and carrots. These snacks are easy for kids to help make themselves.
